Recipe: Honeydew and Feta Salad


Looking for a great salad to take to your next BBQ? This is the one! This salad is all SUMMER thanks to fresh herbs, savory feta cheese, and slightly sweet honeydew melon. Garnish with some edible flowers and it’s sure to be a hit at your next get-together!

Honeydew and Feta Salad

1/2 honeydew melon
4-5 small pickling cucumbers or 1 long English cucumber
1 small shallot
1/2 cup feta cheese
2 tbsp chopped dill
1 tbsp chopped mint
3 tbsp olive oil
juice from 1/2 lemon
salt and pepper to taste
alyssums and nasturtiums to garnish


Use a melon-baller or a knife, cut your melon into bite-sized pieces. Slice the cucumbers and the shallot. Combine the melon, cucumbers, shallot, and herbs in a bowl. Add the lemon juice and olive oil to the bowl and toss to coat. Add the feta cheese and mix gently. Taste and adjust seasoning to your preference with salt and pepper. Transfer to a serving dish and garnish with edible flowers and herbs. I used alyssums, nasturtiums, mint, and a dill flower.
