6 Ingredient S’mores Tart

My wife and I have had a crazy couple of weeks with the addition of our first child to our little family. So naturally when I heard it was National S’mores Day I wanted to make something for Dawn and I, but it had to be quick and easy. Just like that the 6 Ingredient S’mores Tart was born. Of course a meringue on top would be a great improvement but if you’ve only got half an hour to throw together a delicious dessert, this recipe is for you. Hope you like it!

INGREDIENTS
TART SHELL

50g butter (1/2 stick)
125g graham cracker crumbs (1-1/4 cup)
2 tbsp brown sugar
2 drops liquid smoke (optional, but awesome)

CHOCOLATE GANACHE

125g good melting chocolate
125ml heavy whipping cream
Pinch of salt

TOPPING

2 cups fresh marshmallows

METHOD

Melt the butter on the stove or in the microwave. Combine with the sugar and the graham cracker crumbs and mix well. Put into 8″ tart pan and press crumbs around the sides and bottom of the pan to form a crust. Bake at 350F/175C for 5 minutes and let cool.

Meanwhile, heat the cream until 175F/80C and chop the chocolate into small pieces. Pour the hot cream over the chocolate with a pinch of salt and stir until the chocolate has melted into a smooth ganache. Pour the ganache into the tart shell and cool in the fridge for at least 30 minutes to set the filling. As you serve, cut the tart into portions and top with marshmallows. Using a blowtorch, toast the marshmallows to golden brown (or burnt) and serve. Check out my Facebook page for a short video on how to make this tart. Enjoy!
